Triple Decker Tortilla Recipe


These are some of the great veggies we have harvested this year. Tonight we made Triple Decker Tortillas and Pico de Gallo to use up some of those yummy tomatoes and peppers. It turned out really well. All the kids liked it, even Boo. I couldn't believe it, but he even ate some of the pico de gallo, onions and all, with a big grin on his face. He is going to have a stomach of steel, like his dad and his brother, Tex.

Triple Decker Tortillas
(adapted from p. 120 of the Better Homes and Gardens Kid Favorites Made Healthy Cookbook)

preheat oven to 450 degrees

1 can of refried beans, divided
1 tsp taco seasoning
1 cup mild salsa
1 cup hot salsa
4 corn tortillas
4 flour tortillas
1 cup frozen whole kernel corn, divided
1 cup mexican blend shredded cheese, divided
1 cup shredded lettuce
sour cream on the side

Apply non-stick spray lightly to the bottom of two baking dishes. Put the refried beans in a microwavable dish, stir in seasoning (more or less, to taste), and heat up until warm. Spoon 1/4 cup salsa on the bottom of each baking dish. I did one with mild for the kids and me, and one with hot for the guys. Place a tortilla on top of the salsa in each dish. I did the mild salsa dish with flour tortillas (which I prefer) and used corn tortillas for the guys (my hubby had some of both and says corn is better).

Now to layer. Put about 1/4 of the refried beans on the bottom layer. Add another tortilla (I actually used more cheese first here). Top that with 1/2 cup corn, 1/4 cup cheese, 1/4 cup salsa. Another tortilla. Remaining beans (I used more cheese here). Remaining tortilla. Top with remaining salsa and more cheese.

Cover both pans with foil and bake in a 450 degree oven for 10 minutes.

Serve with shredded lettuce, pico de gallo, and sour cream.

I let Ladybug cut more tortillas into triangles and sprayed them with baking spray (lightly), then sprinkled them with cinnamon sugar (it was too late in the day to do the churros) which I baked for about ten minutes (it might have been a bit longer) while we ate, turning once. They loved these...simple and not too messy.

Serves eight. Everyone's full. Good meal. Enjoy.
