Monday: Chicken Enchilladas with Spanish rice
Tuesday: Taco Tuesday
Wednesday: Black Bean, lettuce, and tomato wrap ups
Thursday: Triple Decker Tortillas
Friday: Nacho night
Saturday: Cheese Quesadillas served with refried beans
Sunday: Mexican Crock Pot Fiesta Chicken
Mexican Crock Pot Fiesta Chicken
1 package chicken breast tenders, salted lightly
2 cans cream of chicken soup
1 can seasoned black beans, drained
1 can Rotel (or other mexican seasoned) diced tomatoes, drained
1 cup frozen corn
1 tbs taco seasoning
Put all ingredients in crock pot. Cover. Cook on high for three hours or so. Serve on top of white rice, covered with shredded Mexican mix cheese, and sour cream, lettuce, and tomato on side.

A Fun Read-Aloud (or two):
To go along with our study of the Egyptians, we are reading Mummies in the Morning from the Magic Treehouse series by Mary Pope Osborne. There is an accompanying study guide, which we will read, too, probably during school reading time (usually over lunch, though this topic may not be ideal lunch fare!). So far we have been enjoying our Egypt studies, and plan to stick to this topic for another few weeks. or as long as the little ones maintain their interest in the subject. I have to admit that while we are having fun reading many living books and watching numerous films to become familiar with the topic, we haven't added much to our formal timeline as of yet. The days are young and we still have a lapbook to complete and several projects ahead. Yay!...I am thinking that before our friend Flat Stanley leaves us at the end of this week, that maybe he needs to get wrapped up like a mummy...now wouldn't that be fun? Stay tuned!
